My favourite thing in battles is grouping all my cavalry and charging down fleeing enemies.

One minor irritation is that the cavalry charge but only a few bother fighting. Also, when they are chasing, they often trot even when they are marching 'at the double', making it look as if they are escorting the enemy off the battlefield rather than killing their cowardly a$$es.

anyone else have this problem??

I think there are already about ten topics about this. But yes I think everyone has this problem, and it is like this, because the formation of cavalry is falling apart, and they wait for each other for attack. But when there is no obstruction they will kill down the escaping man.

Easiest way to make cavalry actually attack routing units is to tell them to run straight past the routing unit, then when they are passing through the middle of the enemy formation tell them to attack.

Another possibility is to put them in compact formation and ask them to run through the enemy without attacking.

Yes to both of these posts. Both are right and it helps to maintain formation.

As a MTW veteran, I recognize this was a flaw in the first MTW too. Apparently they didn't succeed in correcting it. However I must say there is a major improvement: now the horses run faster than the men!
In MTW, your horses got exhausted very fast, and when they chased the enemy infantry (which was also exhausted) while exhausted, they didn't go faster!
Not very useful, especially in the sand, where the cavalry is exhausted very fast.
