Haven't tried this out yet. But, it says in the manual that it you convert a Fortress (min. pop: 4500), it will give you a City (min pop: 6000). So, does it mean that if you convert a fortress (with pop between 4500 and 6000), you'll get to "city" status and start building from there?

I think the manual says you need the population first, or you'll convert to the appropriate level of city ( i.e. one below). But can't be bothered checking...

Rate of population takes longer in castle line.

Yep, it's really not worth it. Converting back and forth costs money. Also, city buildings give health benefits etc. so they grow faster.

Particularly in my mod, where I've normalized the growth benefit of farms to the point where a castle can just barely reach the 10000 population mark.

Er, that's not what I meant. I was going to convert my seaside castles into cities for the lucrative port trade. (France has quite a no of such castles). Thanks though!

Well then... go try it. In my experience whatever the convert icon tells you you'll get is in fact the level of the converted settlement that you end up getting. So if a fortress has between 4500 and 6000 pop, check its convert-to-city icon to see what kind it says you'll get. And then of course try it to make sure
