Recruiting crusade mercs

On my first crusade, I was able to recruit crusader knights and sargents everywhere along the journey to the Holy land, but on a last two all I can recruit is pilgrims and religious fanatics, which are basically worthless except for cannon fodder.
What do I have to do to get the better crusade mercenaries?

It depends solely on what provinces you are in when you decide to recruit mercenaries. I am not sure upon which mercenaries each different province allows you to recruit but someone may come along with a list.

Religion in an area might affect this as well, since in games where i've gotten a decent amount of Christian faith going (like around Jerusalem and whatnot during the various Crusades) i've seen armored sarges and crusader knights even show up on the list. I did notice however my religion was dominate in the area before the crusade started, so it may have had something to do with it (it's kinda hard to recruit religious zealots when nobody in that area believes in it)
