Religion and non-playable factions

Do non-playable factions each have a specific religion? If so which factions are which religions?

I believe the Mongols go under the pagan religion. Some provinces to the east are pagan and heretic. There are also some mostly Jewish provinces. In southern France, heresy runs rampent. Can't really be more specific than that.
