#1 The enemy takes a large number (6+) of artillery pieces. Pure Melee.
In this instance, you can pick a whole army's worth of 40/60 man infantry units, perferably with decent speed. Spread them out in a line, they only need to be 3 deep or so. March forward. (of course try to take the worst weather possible, and if you want to use cavalry waypoint them along the map sides using terrain to obscure so they should arrive at the far map corners then swing around behind.)
Unless he has artillery positioned far to the flanks, the head-on shots will pass over your troops, and you'll only take a few hits from lucky short rounds. Once you get within the min range of his guns, you should probably stop your middle units and allow the flank units to march around the sides, turning your flat line into a " U " shape, then finally an " O " shape.
Before you can envelop, the camper will probably decide to charge. The truth is that your center is weak (p.s. dont put your general there) and now the game becomes a race. Simply put: you must rush your flanking troops around to hit his flanks and rear before he breaks your center.
Climbing the hill can take a while, so that is why it helps to stop your center and wait once the cannons can't fire. If the hill is a very large one, this technique is difficult to pull off in any event if youre facing a good opponent on a long steep ridge. Still if you advance and envelop by the numbers, you should be alright. Also, make sure you take troops that have a bonus versus cavalry. Taking cavalry works on the flanks but if you take nothing but cavalry you risk fighting spears uphill as well as giving the cannons bigger targets. Missile troops are a waste with this technique: you need to outnumber him in melee so you can wrap around the sides.

You need either good long-range archers supported by Anti-cavalry cavs (like the old yari cavs), OR mounted archers. The technique is simple to relay but complicated to perform. Walk up your archers, even a single unit might work well enough. Keep your light cavalry under cover as close as you can manage, and just sit. Walk those brave little archers up as cannons blast everything around them. Get in position to fire on the artillery. His cavalry will probably rush out to attack you. If not, your puny archers should whittle down the arty crews considering that if theyre spread out the balls fly overhead. The camper WILL be charging though, probably with any cavalry he has. When he does you can manually break your archers, and pray to GOD that he gives chase. If so, ram all your light cavs down his throat and wreck his cavs as much as possible. If he brings his whole army down (off that hill) to play youve basically won, because you can rush up your remaining units which will outnumber his. Even if he takes all spears, he will have a hard time if you can get around his flanks.
Cavalry archers work too, but it really all comes down to technique: you need to be careful in how you position your troops. The support cant be too far behind, and you obviously have no chance if you cant approach his position without all the artillery blasting your whole army.

Take as many artillery pieces as you can, something like 12 or so. Keep the remaining 4 hidden. Spread the 12 arty out all in front/middle so that they have a clear LOS on the main camping hill. When the fight starts, select all your arty and train them on one spot. It is more fun when they all fire at once. I dont know if you can win much this way, but if he doesnt come off that hill you probably will.
Alternatively, take 16 warrior mo-err I mean fast units, set them up as far forward as possible, and as soon as the battle starts double click behind his army. Then go get a soda. Once you come back you might want to order your units that run past his lines to turn around and hit the rear. The best part of this strategy is that, if it works, you will have solid proof that the camping player possesses no skill whatsoever. Save the replay (if it works) and boast often and loudly to anyone who will listen.
