I think something that the SP campaign would benefit alot from would be keeping track of a province's population.
The more people, the more farm income. People could be killed, or flee when wars occur. Also, the population could determine the availability of able bodied men for revolts and things of the such. For example, if you face several muslim revolts in a province and routinely slaughter them, the proportion of the population that is Muslim would drop.
The other side of the coin would be that as you kill off your own population or press them into your armies you would have a tougher time finding men to raise new units with as the population dwindled.
Now, I dont think itd be necessary to keep track of the entire population- but probably just the men of age to fight, work, or serve in the army. As it stands now, there is no control structure in place other than florins to limit the building of armies. With populations limits in place, players, other factions, and rebellions would be limited as to how many men they could raise (although I supose there would always be mercanaries). For example, a war-torn province that has been ravaged by warring factions for 50+ years would generate very little income and would have few men available for raising new units.
