Simple question: I have read about being able to dismount my Knights so that they fight on the ground, how do I get them to dismount?

u can dismount them before the battle begins ie when deploying they then stay that way for rest of battle. Right click the unit & a list of options will appear

So, what's the value of doing so? I always thought it was cool to be on horseback in a melee.

The option is mainly for castle battles. Staying on your horse makes you a much bigger target.

Some knights ( and other units ) can dismount in open battle. This might be useful if the enemy has lots of spear and pike units, or if the enemy has lots of knights (more than you) then it might be useful to dismount and fight as spear or polearm guys.
Lithuanian cavalry can dismount as archers. Useful if you forgot to bring any.
