First, hi to everyone! This is my first post here, but I have been using the info of this forum for ages, and checking it regulary.
Now, this might be asked somewhere already, but I found nothing in scriptorium. I would like to know which files I have to change to make a unit available for recruitment only in certain settlements.

You must create a hidden resource in the first line of export_descr_buildings (EDB) and assign this resource to the recruitment lines of the unit. Look at the EDB guide in scriptorium.
Then you must put this resource in the regions (descr_regions in campaign folder) you want the unit to be recruitable.

as "FYI" ...
search "ZoR" (zone of recruitment), the info is available, just not under "regional units" ..;)

Is there a limit of how many hidden resources there can be in 1 settlement??
Looks like 9 resources (including hidden_ ones) ...
there is a Hard coded limits thread (https://forums.totalwar.org/vb/showthread.php?t=42905) already, you may check it if need info about it.
