What exactly is the difference between part of the population being jewish and pagan? Also, is there ANY Province with a considerable jewish population?

Pagans are followers of a polytheistic religion such as Roman/Norse/Greek/Celtic Mythology. Jews worship one G-d.

Game wise, there is little difference as they are both seen as being heretics from the perspective of the Catholic church. Large percentages of either category can promote Crusades. Rebel controled provinces with no priest around can cause the numbers of pagans and jews to increase. In one game I saw a rebel province in northern Germany with 70% Jews (non-historic of course) get crushed in a crusade (historic).

In real life, the first Crusade was really the first Holocaust for the Jews, with several million being killed by the Christians on their way to the Middle East.

Haven't noticed or looked, but what are the numbers like for Jews in Spain?

Have read that Spanish persecution of Jews in Spain laid the groundwork for Spain's eventual decline in 1600's-1700's - these were the merchants and wealth generators.

Yep they got kickd out , and belive it or not , a large number of them moved to the Ottoman Empire.
Also to North AFrica...where there are still small comunites of Jews in areas like Tunesia.
Indeed it was one of several cause to the decline of Spanish power.
The LArges PAgan populations i have seen are east of Kiev.
Funny thing is , they are my moste loyal in all my Byzantine empire.
