Does your crusader army get the general's bonuses if you stick him in there?

Yes, you can even put your king or heir in there...

And that can be quite a boost. Don't want to waste those nice Order units...

I've given up putting ANYTHING into a crusade unless I want to get rid of it. I put 4 Longbow units in a Crusade in Wessex thinking they would come in handy in the battle. I moved the crusade into a HRE province next turn to find 1 Longbow unit consisting of 18 men. The rest had gone. Not to mention the Chiv.Men at Arms and Chiv.Sargeants I stuffed in there too. All disappeared instantly except for 1 depleted unit. What a waste. That is the worse case I've had so far but generally imo, hardly anything you initially put into a crusade makes it to the destination.

Needless to say I will not be adding any 'extras' to crusades anymore.

As it happened you sent you Crusade out in a time of very low zeal (I have several provinces of 0% zeal right now). After 1200 it is dangerous to launch long Crusades, only send them a few provinces where you know the zeal is high enough, such as against the Almohads from Aquitaine or Normandy.

You brought this on yourself by not checking the zeal.

Hmmmm, I'm puzzled, it sounds like you were looking over my shoulder when I did it. FYI the zeal was between 50-60%. So, in actual fact, I should gain units and lose..., well, lose none imo. Except you lose units whatever the zeal rating. Needless to say, you can expect to meet a thousand or more men on the borders of the factions empires and, equally needless to say, I have a great difficulty in battling superior numbers with rag-tag bunches of less than 20 men except for about 700 peasants in an extreme climate.

No wonder I never complete the 4 crusades in the GA in time!
