I'm having trouble reading the shields on the units portion of the tech tree. They're too tiny. Could someone help me?

Knights Templar come from France and England.
Knights Hospitaller come from... where? Green shield with double-tiered cross. Italy?
Knights of Santiago come from Spain.
Teutonic Knights come from Germany.

What's the difference between Mounted Sergeants, Feudal, Chivalric, and Royal Knights? I have so many different types being produced, it's ridiculous...

First off, Hospitaller Knights are a German Unit. They're kind of Templar like, if you read your history book (or your manual/chart).

Second, the differences between the units you name last are fairly various. Mounted sergeants are light and fairly armored, and can deliver a nice punch with a charge. Feudal knights are less effective in my opinion, they are I believe one of the first type of knight you can make and are easily speared down/arrowed down. Chivalric and Royal Knights are very nice to have. I think the biggest difference in the two lies in loyalty and speed (I could be wrong but I believe chivalric knights are the heavier armored and a tad slower. Please someone correct me if I am wrong). I personally love mounted sergeants for their sheer speed. Slap a few good armor upgrades on them and you have a fairly effective 'lightning brigade' that cuts through just about anything on foot except spearmen. I had a bodycount of over 180 with just 24 mounted sergeants once.

Actually, Hospitallers are an Italian unit. Germans get the Teutonic Knight.

And there is little statistical difference between an Order Knight (Hospital, Temple, Teuton, and Santiago) and a Chivalric knight except

A) Templar knights have a charge bonus of 4 instead of 8 (because they were modeled with only swords instead of lances)

B) Order knights supposedly will not charge without a command, although i did see a group of 4 Templars do so once.

All these knights have the same stats except that Templars have 4 charge instead of 8. Also, Hospitalliers dismount as Hospitallier foot knight instead of chivalric foot knight like the rest. I'm not sure but I think Templars and Hospitalliers obey orders more often while the others will charge without orders. I'm not sure about Santiago.

Chivalric knights have the same stats but can be buildable unlike the 4 above which can only be part of a crusade. High royal knights (royal knights built between 1205-1320) have the same stats but come in groups of 20 instead of 40.

Feudal knights are earlier, weaker versions of chivalric knights. They are the same as early royal knights (royal knights build between 1087-1204) though royal knights come in 20.

Lancers (Spanish only) are the strongest cavalry available in the game. They are the same as late royal knights (1321-1453) though royal knights again come in 20.

Mounted Sergeants are weaker but cheaper than all the rest. They are light cavalry.
