Re: Very Skilled Doctors?
True.
Everything can't be portrayed really accurately, but during battles, most of the soldiers were that count as casualties were only wounded or incapicated [sling-shots are a very good example. If they do not kill, they break bones, and I've never seen anyone fight really good with a broken leg]. To represent this, I think, there is a crazy amount of healing (to represent those soldiers that were wounded being restored again). Of course, when you lose a battle, you have to retreat, and your wounded and incapacitated can easily be picked off by the enemy.
Re: Very Skilled Doctors?
AI generals get a bonus to healing (among numerous other things) in order to present a challenge for the player. If you want to cripple an enemy army, you must be sure to kill off their general. The "defender" armies in central Europe are especially good at healing.
Re: Very Skilled Doctors?
Not to forget that units that were wounded by missiles or javelins tend to recover better.
Also if you didn't win an settlement assault in time then you'll lose. (That's why I usually set no restricted time, unless playing a HA faction) If they sally and you can't beat them, or they can't beat you in time, then it is a draw.

When a besieged force sallies, it will be a draw if you don't win the battle before time is out, but if you are the attacker you will lose by the end of battle time.
