Hi, i am kinda new at playing this game, so bear with me...
I am playing as the polish and can't seem to build a chapter house, or go on a crusade, is that normal? From the section in the manual, I was under the impression that all catholic factions could go on crusade....
It is normal, the poles can't build chapter house. It is the same with the danes. You will have to edit the game in order to make them crusade.

also, I believe if you can capture a chapterhouse intact, you can then build crusades and crusade.

Apocalyp$e crusades are nice but polish have unique unit that is nice (polish retainer and you can get lithuania( and started making lithunia heavy cavalary)
No, Polish can't crusade at all... chapterhouse can't be built, and even if you capture one, there are no units listed with Polish that are normally part of a crusade (knights templar, teutonic knights, etc)
easy to mod, though.
just add Polish to the chapter house in the Building file, and then Polish to Crusade under the Unit file and then to a few of the Crusader units (I tend to copy the HRE ones as they are neighbors)

yeah, I tried to capture a chapter house but it is always among the buildings destroyed when I capture the region. And I am not quite up for editing yet, I haven't quite figured out where the files are... I assume I need some sort of extraction program?
Nope, not at all. The relevant file in this case is CRUSADER_BUILD_PROD13.TXT, and it's in the main MTW directory. You can open it up with any text editor, or something like Excel will make it a little more organized. Still, for something this simple, Notepad would be fine. What you do is search for CHAPTER_HOUSE (without the quotations). It'll jump to the line for chapter houses (duh ;)). There'll be a block of text, and at the end are a bunch of factions (starts with FN_ENGLISH, ends with FN_SICILIAN). To give the Danes and Poles the ability to build it, simply add FN_DANISH and FN_POLISH to the list. Use the same format that it currently has (when you add them, make sure you add the , as well). That should be it. :)

I hope i did it right... but I am not sure. The section for chapter houses didn't have the factions listed like you said-there was nofn_ in front of any of them, and there were no sicilians at all... But i tried adding the poles like so-
{ ARAGONESE, ENGLISH, FRENCH, GERMAN_HRE, ITALIAN, SPANISH, POLISH, DANISH }
actually, only castles get knocked down a level when starved out.
when assaulted, most are preserved.
higher castle level, more likely it is for buildings to survive.
Just because the kngihts are not listed doesn't mean that they can't crusade.
just don't expect knights. I've only gotten order foot and fanatics with them.
