I have read about Plautius' foray into Brittania. One night he sent germans across a river, before the next day's battle, to disable the British chariots. The Germans cut the lines on the chariots and slew the horses.
I think it would add to the game if assassins could sabotage units. It could be very similar to the options an assassin has in a city now. Of course, it would also work both ways.
