You can only record battles (I assume you mean like a movie that can be replayed with free camera movement) in custom battle mode. In campaign mode there is as yet no such possibility, as much as we would all like to see it happen... *rueful*
There is no way you can drill your armies around alone on a field. You gotta practice with another army around, I'm afraid. The best you can do is the settlement thing that was suggested by CMcMahon.

Or you could make the other amry 1 siege unit, like ballistas and have them defend.

Which of course takes away a huge portion of your manoeuvring space, but there's no way around it.

A city does the same though... So the ballista or maybe a scorpion, I don't know which has a lower range, is the best way as far as I know.
