Who actually gets all the wages that show up as an expenditure on my balance sheet screen?

Generals, Princesses, Priests etc?

Actually those are who you pay upkeep on.

Wages are the sums paid to the royal family and generals of your factions.

Wages are paid to your agents like spies and priests. You will notice it increase or decrese depending on if you hire more agents or lose them.

Does anybody have a full list of who gets wages?

Generals wages are part of army upkeep?

In other words, having more generals is more expensive?

Same with family members? Princes and Princesses?

Well not generals' wages so much as the upkeep you pay on their mounted escorts. If I recall what I heard correctly, then you do in fact pay upkeep on the General's Bodyguard units that come with each general.
