Not sure if this is a new idea or not
I thought of this idea last night while stamping out the last resistances in Scotland and France. After you defeat an army in the field and capture some of its men/family members, you should have the ability to keep the family members as prisioners. Sort of like a bargaining chip, you attack us, we kill your heir type of situation. Is that possibility in the new patch/version/mod?

Bad idea for the most part, people would abuse this way to much if the computer treated this in a realistic way.
But I do like the idea of heirs and so forth being ransomable for other things then cash, maybe ransom the king for a peace treaty or even vassal ship.
It's even kind of realistic, convincing other kings to sign treaty's at sword point in exchange for there life.

It's a fantastic idea. One of the major complaints people have is that the AI cannot be trusted as far as one can throw it. Of course I wouldn't take advantage of it because it's not my style of play- I'd kill the nobles regardless just to get the computer to attack me. But for those who would use it, I do not see how it is "abuse" to keep AI family members hostage to enforce a truce.

I almost always execute all prisoners, why give the enemy men back? It just came to mind that you should be able to USE the prisoners for more then just money.

Why not have the option to keep them, in a similar way to bribing an army.
The programme could use your generals Chivalry / Dread to determine the chance of success in the same way that a diplomat’s influence is used. Those that are compatible with your faction join your army. Those that are not either return to the land if your chivalry is high or are executed if your dread is high.

That's a good idea.
It could be positioned next to your settlements.
Enemy spies could then be allowed to open the gates, releasing a few full stacks of vengeful prisoners right in the heart of your empire.
That should make the end game more interesting, if all the prisoners you have taken during your campaign suddenly escaped during an earthquake.

I believe that would be interesting if CA could implement it. I think it should only apply to nobles captured though, such as generals and royal family members. That would help to sway a very resilient AI faction to ceasefire. I doubt CA would implement it though, even if they could.

How important is that post 1.2? I've just started playing and I havn't gotten very far (only 50+ turns) and I've executed almost all of my prisoners.

You won't get ceasefires. I've played with both high and low global standing postpatch. With a low standing(as the turks), it was completely impossible to get a ceasefire. However, when I had a good reputation, I was able to get ceasefires at the very same turn I was attacked. If the enemy attacked with a small army and wasn't really intent on killing me off, then I'd get a ceasefire. Of course, if they wanted me buried, I wouldn't get one...
And you can also get a lot of cash for those ceasefires.

That said, I have noticed that the AI does come to me more with ceasefire offers post-patch (in leaked 1.2, actually) so although you can't approach them you can sometimes get them...

Well frankly if you are beating the hell out of them enough to capture prisoners often then they will want a ceasefire, won't they?

Leaked 1.2 ( have not played enough of official to know for sure ) playing M/VH ceasefires are possible...as long as your reputation is good and especially if you can improve your relations with the enemy. It also helps very much if the enemy's priorities are peace. I was at war with Poland, playing HRE, and after their three or so futile attacks upon and around Breslau I sent in a diplomat. I proposed an offer for a ceasefire and they accepted.

I released to get my chivalry to max to quickly get castles to 9000 pop since on VH the AI gets insane pop growth bonuses. It's nice to get to citadel after 40 turns

I agree, you should be able to use them as forced labor or if the war is going good and your a good leader with high chivary and their homeland is pure scum, you should be able to recruit them.
