how do you edit how long your units can last?

It is basically impossible, there is no value for it like attack, defense. The only options are the attributes hardy and very_hardy.

Or you can change their stat_heat values. The higher it gets (I think it ranges from -2 to 5) the more quickly the soldiers will tire. And the hotter the battle-map, the greatest its effect. Note than on maps with climate_heat = 1 (for example northern, central europe and similarly not warm places) the effect of stat_heat drops to absent.
