Well there is plenty of fiction on Chinese imperial history but frankly if you don't go in for Romance of the Three Kingdoms or anything of the sort you are pretty hamstrung because being a seminal text it is frequently imitated.
Check Inoue Yasushi's novels about mongol china (there are three I think: one about Genghis Khan, one about Kubilai and one more called Lou-Lan -at least the french translation)
Oh, and how could I forget Robert Van Gullik's novels? Not so impressive in terms of litterature, but really cool. Discover Judge Li! If I remember well, it's about the Ming era (15th century).
Edit my last post... of course Genghis Khan's story is not about China but anyway, the novel is a true masterpiece. I hope it was translated in English, but since a tremendous lot of foreign novels are translated in French, I'm due to think it's the same everywhere else... and it's obviously not...
