it helps to post questions in the right games forums not the entrance hall
if you mean med 1 then you need to make a port keep and shipwright to make ships then move your army into a region from where a line of ships goes from the port of your province to a sea region next to the province you want to attack
so build a port shipwright and keep in wessex and move your army there and make 2 boats one for the english channel the other for the irish sea
for med 2 make a port make a ship send the ship next to land send army into it send ship to ireland send army of ship at the city (cant remember name)

Rome Total War is similar to Med2 description; build port, build boat, move army onto boat and then move boat towards land square the other side so they disembark.

To get to Ireland you'll need a ship in every sea between the province of embarkation and the province of disembarkation. You'll also need a port in the province of embarkation. If you still can't pick up your army stack and drop it in Ireland then it's probably because enemy fleets are interposing. If this is not the case then it could be fleets belonging to the current owner that are stopping you. Hold down the "v" key to show the status of sea zones. Red = hostile (enemy fleets present), orange/brown - neutral (neither friendly nor enemy fleets present though allied are neutral may be), green = friendly (friendly and allied and/or neutral) fleets present.
