I'm not sure if this is a problem, but I just launched EB and the only playable factions I can see are Gaul, Julii, and Scipii. I've never played this game, but IIRC, Gaul isn't supposed to be available that time since it isn't united, and there should be a lot more factions than that.
Did I do something wrong?

To be sure, you did something wrong. You should see all the playable factions. You could either wait for instructions from someone who knows what they are talking about (not me), but I would suggest uninstalling and starting over.
Good luck and give it time. It is well worth the wait.
I would really suggest that you use the shortcut on the desktop with the EB logo, rather than the pop-up window of RTW when you insert the disc. (The latter will simply launch vanilla RTW, the former launches the EB mod with it as well!)
Another noob question: What is "vanilla" exactly? It keeps saying that in the EB FAQ.
I'll re-install it and see if it works.
"Vanilla" is plain, unmodded, out of the box 'Rome - Total War'.
Yes it certainly seem's as though you are trying to play normal RTW, as EB doesn't have the julii etc as factions.
When you install EB you should get a new desktop shortcut to launch EB from.
Yes I got the shortcut, but I made a mistake and mixed it with BI.
