"Superior Cavalry Commander: +2 commanding cavalry, -2 commanding infantry"
That's a decent description of how I developed after my Scythia campaign. I never use pause so my attention is limited. Now whatever faction I play, I use Cav at the beginning, middle, and end of a battle. "Alas mere infantry, poor buggers".

im an Infantry man myself. i prefer to take cav as a back up and only take about 3-4 units, with 90% of my army infantry.

i like all equally well in M:TW i do, havnt really played Rome or shogun. Both play a part in my battle plan. but, maybe i prefer cavalry more, just because of their destructive power, Royal knights, or gothic knights, but also i like cannons when you can get them ~D ~D
If only one choice: Hun Elite Cavalry.
Infantry is the heart of any army, for me at least. My missles units and cav are there only to support my normal 4 Halberdiers and 4 CMAA.

i've recently been using a little more cavalry in my recent spain campaign... mostly infantry tho... i usualy have my sub general lead a unit of clavery "secretly" behind the enemy army to take out any balista/onagers they may have then retreating further behind the enemies then when the battle finaly gets under way the enemy experiances a major calvary charge from behind splitting the enemy up and even causing masse routes if i'm lucky
