Conquering cities, destroying every upgrade in the city, making loads of cash, then abandoning it to rebels. Not only does the computer have to destroy the rebels, but their city is now crap ;)

Spamming useless crap armies of peasants or militia and overwhelming them with sheer numbers. It does cost a lot of upkeep though

Horse archers and mounted crossbowmen. Heck, archers and crossbowmen in general, but especially mounted. There's just something about watching a hail of bolts and arrows smash into an advancing wave of enemy soldiers that pleases me much more than the actual melee.
And when they can't even strike back, they just have to keep marching under fire until they meet my infantry, which is when the HA charges against their rear and they break... ahhh, that's the best.

BTW Insane..just a word of caution about killing ur "friends" off.. if your assasins are discovered enough and fail their missions it will degrade your diplomatic relations to the point of war. So aim true!

I always build at least about five or six full stacks for when both the Mongols and the Timurids arrive.
And I love making enemy cities Rebel. Rebels seem cool by the mid-game, its like they're a novelty. Right now I've triggered a French war of independance in my Turkish campaign. So far with the aid of my spies and sabotaging assassins the rebels have liberated both Paris and Rheims from the English (a superpower in this campaign), and Bruges has the peasants revolt sign and is at 50% loyalty.

My Imams helped a little, but not much. Rheims was at about 10% Islam, 90% Catholic when it rebelled. I've noticed in my own settlements heresy seems to create more unrest than other religions, perhaps having double the effect on public order.
I've got so many spies in Bruges there's a 164% chance they'll open the gates if I attack (and maybe I will now I just took Antwerp).![]()
