IIRC one of the major problems with jedi generals (if you face them, that is) is that only a limited number of men can actually perform an attack at the time. So if it's only 2 or 3 (can't remember the number) then you can have an army of any size, it doesn't matter. I've been defeated a couple of times by a jedi in the past, but these days a counter them with A) javelins (early) B) Arbalasters (whenever possible) or C) A high attack, preferbly armor piercing, unit in wedge and charging. The only way to actually hirt him.
As to the other point: How do you get him?
This is my best advise: You take a high star general (to maximise hitpoints), in a decent unit (not urban millitia). You would do wisely to pick one with a valor v&v or the line giving them extra "hit points", you don't have to care about acumen or other stuff. Then you make him vanguard in *all* your battles. As he kills and kills his valor rises. Be sure to remember that generals and royalty is worth extra valor - so try to take those out with your padawan. The important thing is not winning the battle, but raking in kills. (Not capturing, as that does not increase valor). The difficult thing is trying to figure out when you need to withdraw him, as you cannot keep track of his hitpoints during the battle.
You can even follow his progress in the logfiles, take some screenshots and post a story of a single individual in the 'pics and story'-thread. I've been thinking of that, but hadn't had the time to do one so far.
