Once you get the world is round you can train ocean going ships. With them you can cross the ocean and sail west. Once you reach the black area you will discover new land. The main area of Mexico is only accessible from the north. You will find there four Aztec cities filled with guys masquerading as chickens. Bring enough cavalry with you that will scare the living daylights out of them.

Keep in mind that guns arent always the answer, you will be duking it out in the jungles most of the time so id say that bringing your best infantry is something to seriousley consider. My knights ripped through their loinclothed bodies pretty quickly

Infantry?!

No, no, no, no. Bring cavalry. Light, heavy, medium... anything with a lance. Half a stack of cavalry with shields can wipe out the entire Aztec army. A full stack if they aren't carrying shields, as you'll suffer more losses. Hire the local mercs for your sieges if necessary.

You can consistently get 10 or 15-1 kill ratios with cavalry stacks against the Aztecs.
