Is zeal% only used for how many locals joining a Crusade or a Jihad? Does it have any other properties? And if is that so, then what is its use for an orthodox territory. Well I understand that it may someday be a catholic or muslim area,but what about a 50%zeal in a province with 100% orthodox population?

There are some other things Zeal affects. One is the chance of successfully burning a target Catholic general with an Inquisitor; higher Zeal in the target province makes the Inquisition more likely to succeed.
The other is that low Zeal governors are unpopular in high Zeal regions. How exactly that works I'm not sure.
