Converting as Lithuania

At around turn 62 I was offered the option to covert to Catholicism, but I declined as I could not afford to lose all my Pagan units as I was invading a very powerful Novgorod faction.

But now I'm finishing them off I would like to convert before my war against the Mongols. Will I get offered the option of converting again?

the short answer is no.

By the way you will NOT lose your troups after you convert. You will not be capable to retrain some of them, and the rest will have higher building requirments, but that's about it. Thing for it as Marius reform in RTW.

Gah! I just noticed Lithuania do not lose their troops after I watched their convertion video, while playing as Denmark/Kalmar. The message told me I would lose all my pagan troops.
