a four star/point imam is needed and of course you have to be a islamic faction
Yeah once you have a 4 piety imam you double click on him to bring up the agent screen and then there should be a little yellow circle at the bottom (like the 'join crusade' one). Click that and then the target selection screen will come up.
Aaah... It's the Imam! Off course! I've always looked and looked on the general's screen.

To call for a jihad you need an imam that has at least four piety. Select the imam and it will have a button in the bottom left corner that says "Call a Jihad" or something like that. Press that button and it will bring up a menu of all the settlements applicable for a jihad. Select the settlement that you want to target and the jihad will be called.

Btw, at the start, all three Muslim factions have one imam, and all of them have sufficient piety to call for a jihad. For the Moors, it is Fakhir; for the Turks, Baraka; and for Egypt, it is Mahfouz.
I suggest calling a Jihad on a nearby rebel settlement right on the first turn as long as you could conjure up the 8 units required . it helps in so many ways. giving your guys expereince bonus etc...
one annoying aspect i've notice though , is that during longer Crusade / Jihads, more often then not some armies will be fairly far away from their realm by the time its over but they're not the winner, and they'll just be stuck there. won't do anything to move back... and rarely attacks nearby settlements... zzz
If you're absolutely sure of accomplishing your Jihad goal that turn, have every decent-sized army declare Jihad and hire mercs. Then have your "real" jihad army take the goal before any others move. The Jihad ends and you have massive amounts of infantry. Ghazi's are very good and even the lesser Jihad units make fine, low-cost maintenance garrison units for castles.
Jihad's are awesome.
You don't get the same powerhouse units as a Crusade, BUT you can get them more easily because all you need is an Imam with like 4-5 points i think.
Jihad gives you the travel bonus, and you can recruit Ghazi's and some other expendible unit.. In one battle I had 3/4 of an army of just ghazis and sent them as a horde to bust through the gate and over the walls..
Then your General will become a "Holy Warrior" .. kind of a cool dude to use defending from Mongols
