For variety and change, I don't think you can beat doing a migrated faction game. I'm playing one with Epeiros-as-Pergamon and having lots of fun. This coming from someone who usually plays only the Romans.

That said, I still don't like phalanxes, barbarian armies or horse archers, which leaves me with few options.
