musket men w/bayonettes = new pikemen, riflemen no bayonette = new archers.

Dragoons and cav approach infantry, infantry forms square, dragoona dismount and form line fireing on infantry square. infantry forms line in response, cav charges, infantry routes, rinse repeat

Well as far as i know

Musketmen will have the ability to fix bayonettes.

I'm not sure if you can dismount

And I think the first idea would be pretty cool but probably not going to be introduced in the game.

Yes, CA did say that some units in Empire will be able to dismount and remount during battle (including dragoons).
