I think it was just a random pick really. Can't remember a dicussion about how to call the that rebel general... So i guess there's nothing behind it.

Seriously, you could have made up some kinda story about how it's an anagram for "Rastes" which was the battlecry of the soldiers of the Arverni Kingdom, a word believed to be descended directly from the Indo-European word "Razta," a word which can be traced, either directly or indirectly, from every existing word that is related to rebel, rebellion or a fight against oppression, especially the word "Rastafarian..." so in other words, Sartes is a Rastafarian.

Or something like that.
