Some theaters that saw large scale conflicts during the timeframe:

The baltic - The great northern war. Sweden, Russia, Denmark, Poland, Brandenburg/Prussia, Saxony.
North America - The war of Jenkins ear (not sure which of the many conflicts this is:p), the French & Indian war, the American Revolution. Starring Britain, France & Spain (possibly Holland as well if we include the west indies). The earlier conflicts should have very active native indian players as well.
India - Various exotic indian states, the mighty Mughal empire, Britain, France, Portugal, and Holland duke it out.
Europe: War of the Spanish succession, Seven years war, and the Revolutionary wars offer three very different conflicts with different technology but on the same piece of real estate.
The Balkans/Black Sea: Russia, Austria, Poland, and the Turks fight for hegemony over this mountainous piece of real estate.
South America: The revolutionary wars. Grand Colombia, Spain, Portugal/Brazil...
