I like fighting against the Seleukids, because early in the game they will send out huge stacks of hellenic native spearmen, which may be the weakest unit in the game imo. This leads to tiny horse archer armies of like 300 killing 3000 seleukids or something, which is always fun.
I really like fighting most factions later in the game. Currently playing a Carthage campaign, I am trying to stall and conquer everything EXCEPT Rome so that they will hopefully build up and when we do finally start to battle they will have some serious units to throw at me.
The Saka Rauka. Their armies are obnoxious to fight, and at times are nearly invincible. Further, no matter how hard you try to kill the bastards, they take yet another city. They have proven to be one of the more difficult factions to deal with, and I like difficulty.
Even now they plague the frontier, and I'm not sure my armies can stop this cancer before it spreads again.

Hunting Romans down wherever I can find them.
Ptolis are sort of huntable too. Esp. in my Carthargian campaign in which they started a world war by besieging Lepki. All I can say: we got rumble in the Nile valley these days. They do have some good units.
