Dont fight for what you want, fight for what you can have.
do the models change appearance? So they become new types of units? But wouldnt that use unit slots?
maybe for the legionaries you can make it so, that when they are upgraded they start wearing lorica segmentatas instead of lorica hamatas?
From the FAQ:
That is the definitive answer to whether there will be Lorica Segmentata in EBII.Q: Will there be Lorica Segmentata in EB2?
A: Lorica Segmentata was not widely used within the games time frame. Even though it could be argued that it was used to a minimal extent at the very end of the time frame the team has decided not to include any Lorica Segmentata in the official EB2 releases.

Armour upgrades were one of the coolest things about MTW2, in my opinion. I always pushed to upgrade my blacksmiths, so I'd get cooler looking units. However, I suppose this is not in any way historical? Or rather, historical in the EB timeframe?
I logged quite a bit of time in playing MTW2, and I can tell you that weapon models do change when weapons are upgraded. On swords it's not always noticeable, but play a custom battle with with two units of cossak musketeers, one upgraded and one not, and you'll see that their muskets are different. A few of the other obvious ones are halberdiers of any sort, two handed axemen, and the maces of Gothic and Teutonic knights.
