I really want to conquer the whole world, and Im wondering if I conquer all the provinces needed will the game end and not let me continue playing? If that's the case, I can just leave one little province left un-conquered I guess.

You can play on.
You can't conquer all the provinces anyways. I believe some of the rebel provinces in North to Sub-Sahara Africa are unconquerable, and the EB mod uses them as a device to prevent crashes. Also, once your empire reaches critical mass/aka large enough, a quarter of your cities will start rebelling due the unrest stemming from the distance penalty from the capital.
Sahara and the Arabian desert is unconquerable, however it is one province. It is not used to prevent crashes, but to keep track of events in the game.

someone did it as aedui and even hacked Terhaza (the settlement for sahara and arabia) It looked awesome!
