It is possible, but you would have to change the desrc_models_battle.txt, the export_descr_buildings.txt, and the export_descr_units.txt.

A while back (probably back in v0.80) there was a minimod that allowed the recruitment of a Spartan mercenary using the "fancy" Spartan skin that was made by the EB team but not used because it was a depictation of Spartan mercenary and not a Spartan citizen. Someone could try updating that...
