As the Aedui, I prefer to let the Arveni keep Gergovia, but take their other two towns and destroy all their armies apart from the garrison of Gergovia. I then make peace with them using Force Diplomacy. This seems to redirect most of their hostility towards the Elutheroi towns to the south and west of Gergovia.
