Yeah, I took the Plains Nations to Egypt and made Cairo my capital last week, just for kicks and giggles. Nobody can beat that.

A long time ago, I also took the Knights of St. John to Iceland (and made tons of money through trade slots and a nigh monopoly on the North American fur trade; one of my fav campaigns), and Georgia to Mesopotamia (and established a neo-Seleucid Empire).

Now that you got me all riled up, I want to try out my Icelandic campaign again. I doubt it'll work with all the new patches, though.

It's easy. You just gotta slightly modify your savegame file to change your capital and home theatre. I'd recommend doing some searches on TWC, because PeverGreeN is far too lazy to bother posting a read-me here.
