Lets say i attack someone and my Combat mode is set for stand and fight and the person who i attack is set for stand and fight. Does that mean a fight to the death? Or are there only a limited number of combat rounds within a phase/action?

If you both stand and fight, with no retreat orders, one of you gonna die. Welcome to the jungle.
edit- to be specific, battle continues until you one or both of you dies, or run out of bullets and strangle each other to death. There are unlimited combat rounds in a phase if you don't run.

Since this is Resident Evil do we have to be standing still to use any melee weapons or guns we may have?

I just want to make sure I have got this all down.
First part of the Orders phase is the movement sub-phase.
In this part, players may choose to move to a new location within there movement range or they may perform a ‘movement’ action.
Commands for this sub-phase are ‘Move to XYZ’, Engage Target, Snipe, Search Thoroughly & Stealth
*Some of these action have prerequisites such as holding a long range weapon or a target being in you zone of control.
Second part of the Orders phase is the action sub-phase.
IF you decide to move to another location you must choose an action to perform at the new location.
Commands for this phase are: Berserker, Assassinate, Vigilante, Stealth Vigilante, Defensive, Stealth, Search quickly & Cooperate.
*The above actions are not available if you have chosen one of the following moment commands: Engage Target, Snipe, Search Thoroughly & Stealth.
Third part of the Orders phase is the Battle Mode sub-phase.
This phase decides your actions if you are engaged in a battle after the movement phase. The two available commands are: Run Away & Stand Ground.

I do have some questions that lead from this.
What happens when two people decide to use the ‘Engage target’ movement command against each other? Will they each perform one round of combat or fight to the death or perhaps will this be decided by what they have decided by their battle mode setting?
I am guessing it is possible to do hit and runs. Aka go into berserker mode hit everybody with a first strike and set battle mode to run away so that you run away when you are counter attacked (if the target has ‘Stand Ground’ mode set)
What happens if two people move to the same square with Berserker mode set? Is it the detail of the orders that decides who hit’s who, dice or what the battle mode is set to?
How does group combat differ? What happens if I am in a group of 5 allies and we all arrive at the same square with vigilante mode set and there are a 2 zombies or non-humans present? Could our combined first strikes take them out?
What happens if it doesn’t and we all have our battle mode set to hold ground? Who attacks what? Do two allies fight against the two zombies while the other 3 twiddle their thumbs? Or will it be 5 attacks on one zombie then 5 on the next?

This is correct. You have some moves you can do in place of movement (Engage target, Snipe) or you can do while moving or not moving (Stealth, cooperation, Search... the usual suspects)

Yes. You tell me if and when you run away, or I assume that you do run away immediately. Otherwise you could find yourself dead due to misspeaking. Standing your ground is if you really think you can win a battle, or if you have a bunch of your buddies who can also fight well standing ground with you. Every person on each team scores a strike against every person on the other.What happens if it doesn’t and we all have our battle mode set to hold ground? Who attacks what? 1 versus 3 means the one guy attacks three different people. The three all attack the one person. So there's 3 hits on one side, 3 hits on the other side, but the team side is hit once per person and the loner gets hit 3 times.
If the one loner really kicks butt at combat, it's possible for him or her to annihilate the other 3.
However, the one guy will probably take damage due to the number of hits he takes.
You can die quick in this game if you get attacked by a horde of stuff.
