but there you make the common non-cheeseknowing person mistake. Cheese is not just Cheese. Every piece of cheese is different. They look different, they have different feelings, some Cheese smell like fish and others have little to no odour, others again smell pleasantly Cheesy. You have to treasure every piece of Cheese that you will ever lay eyes, hands or tongue on.

And that is exactly why you should try every piece of cheese you can get your hands on, to get a feel for the whole range that exists!

Edit: Just make sure you avoid the ones that are...you know...clearly too mouldy!

Yes, but on the inside all cheese is that same.

Ok you need to adult about this. Every decent cheese needs a decent drink. Take some cheap cabernet sauvignon or a half decent syrah. A 60+ year old cheese needs a certain class of beverage to wash it down.

Geez, a fifteen-year-old cheese will set you back $50/pound, I can't even imagine what a sixty-year-old cheese is gonna cost ya.

My favourite cheese is a good dependable cheddar, not going to knock your socks off, but it's never going to let you down either. Now, there's nothing quite like a good Italian, they will knock your socks off, but after they've blown your mind once or twice, you very quickly get sick of them.

Taking a 60+ years old cheese is every cheese lovers dream.
Go for it if you have the power to take it like a man.
