You're around thirteen stone and 5ft11... that's not overweight as far as I am aware.
Breakfast is the most important meal of the day; if you don't have time, make time and get up half an hour earlier. I don't know what a cup of instant breakfast is, but it doesn't sound remotely healthy, so make sure you eat some bran or similar high-fibre breakfast cereals to help ease digestion for the remainder of the day.
For lunches... well peanut butter and jam aren't a healthy combination regardless of the bread you eat it on; potential filling replacements are dependent on what food you like and what you don't, really, but definitely stick with wholemeal bread. The fruit cup is fine, as I'm sure you know, as you really need to ensure you're hitting at least four of that five-a-day. Bottled water is excellent, I assume you refill that when the bottle is empty. The granola bar is a little iffy; some of those can contain large amounts of sugar (usually found in the syrups that hold the bar together), but there are some that are healthy.
For evening meals, perhaps arrange with your mother for there to be a night of the week where you eat a certain healthy option of your choice.
Losing weight doesn't mean you have to stop eating the food you like, you just have to learn to make sacrifices and eat healthily too.
