    Default Squids

For somewhat reasons, I just lost my mind and bought 10 KGs of fresh squid from the market today... duh... (since the trader said she doesn't sold anything this day and beg me to bought her squids for half the usual prices), well, the squids are actually a good quality one and still fresh, but for somewhat reasons, 10 KGs of Squids? my fridge is full because of them and now I must eat those things for some days! dammit my over-generousity.... (since that 10 kgs of squids actually cost considerable parts from my wage)

anyone else had this stupid moments when bought things in open-air market like this?

I've bought squid sushi at a Japanes restaraunt, but that's about it. I personally prefer the tuna, but it's good.

just simply put some squids with pepper, salt, and instant teriyaki sauce, and heat them in microwave. Not the best way to cook them, but at least they are ediable for dinner

That doesn't sound too bad. I'd try it.

I would suggest pan frying rather than microwaving... squid is easily overcooked.

    I love calamari!

I remember the first time I tried it at university, wasn't too keen on the premise of eating what I deemed to be rubber rings; it used to be served as a starter in the SU's bar, picked up a real taste for it and haven't turned back since... even when the SU had to remove it from the menu due to poisoning some students.

You've got to get the balance of flavours right though; I've had times where it's tasted foul due to overcooking or the flavour of the squid was destroyed by overpowering seasoning and whatnot. Well worth the trouble, even if you have got ten kilos of the stuff to get through!

Don't waste the tentacle either. Cut around the beak, remove the ring of tentacle meat intact and discard the head and beak (watch out for the beak, you don't want that). I always buy fresh or frozen, raw whole squid and prepare it myself. The pre-cooked stuff certainly is "rubber rings".

I don't know about the taste, but I always imagined the texture of squid would make me feel sick. Like the time I ate a mushroom, the taste wasn't the problem, it was the texture, like eating a slug or something...

Hmmm... well it's noting like mushroom texture. It's nothing like anything else really... I'm not a fussy eater so I can't really relate to texture related likes/dislikes. All I know is that it's bloody good.

    ^^ Squid is yummy.

@cute wolf: Squid is delicious as snack, batter it, fry it with a little seasoning, a generous squirt of lime or lemon. Invite friends, and arrange a movie marathon --> 10kg will be gone before you know it. What you do need to be aware of is that fresh squid may contain hard shards of a translucent material which make it easy to cut your fingers while “cleaning” the squid.

The "bone" is easily remove if you do so before you slice the squid up. After you remove the head, just grab hold of the end of the bone and pull it out in one piece.

ha this one time I was in Asakusa in Tokyo and after we had visited the local shrine we felt the need for some drinking, twas a small local bar cum sushi place and a fella dropped over a bowl of little wee octosquiddys. Some of the lads wouldnt touch em at all at all so me an the brother gobbled them all, they were lovely only about the size of a small egg with tiny little black dots which i assume used to be the eyes or summit, all I can say is yum yum.

edit: an they were chewy almost like a postman pat sweet from my schooldays

The good thing about squid tubes and tentacles is that they cook quickly. You can whip something up in not a lot of time. I slice the tubes and saute them with harissa and some spices. Instant lunch! Garlic, lemon juice, and a chopped chili pepper works well too.

I've never bought a whole squid before, I don't think I'd know what to do with the main body.

Just grill 'em. All you need is some olive oil, lemon and salt and pepper. Possibly some herbs.

    1) Firmly gasp the head (from just behind the eyes) and pull carefully. If you do this right, a lot of the innards should come out with it.
    2) Carefully cut around the beak, just below the eyes to remove the tentacle mass in one piece, leaving the beak still attached to the head.
    3) Squeeze out all the guts, egg sacks etc from the main body.
    4) Pull out the transparent bone/cartilage and discard along with the guts, head, etc.
    5) Slice into rigs, whatever.

I favour sauteing lightly rather than grilling, but that's me. If you do grill you have to be extra careful or it will dry it out. I mostly serve them in paella with other mariscos, in which case you need to cook them first, pour off the stock and add them back later or they'll get very overcooked.

What you didn't realize is that she had been using that line all day and you were actually the 50th guy to walk off with 10 kg in squid...

Why didn't you just divide it up and sell some to all of your friends?
