You can't get techs without researching them yourself, but you can capture buildings you could not have built (at least I think so).

True. But capturing a legendary building doesn't transfer the bonus to you.
I think there should be more or more specific bonuses to research. Like fighting against fire arrows (and winning) should give you a bonus to way of the bow research etc.
