Depends how tough you want to make it for yourself? If you'd like to be the flaming horde of doom destory everything...but maybe just gov buildings. Keep MICs and other buildings as it's hard enough generating enough money as a nomadic faction.
When I play KH or Romani I like to Hellenize/Romanize every province I take by smashing every single building down and starting a new!

First, destroy the enemy government (built by an AI faction) if there is one.
Second, look at the barracks. If you can recruit troops from it, keep it. If you can't, destroy it.
Third, decide whether your tribe is going to migrate to the town, or leave the current population and culture in place and turn them into an Allied Client State with local regional units.
If you plan to migrate, then every building (except maybe wonders) that is not of your own nomadic culture should be destroyed. If there are buildings of your culture, but say 'Western Greek' after their name, that means they are of your culture but built by a tribe that used to be hostile - they are OK to keep, they can be upgraded later and the 'Western Greek' bit will go away when you do.
If you plan to leave the current culture in place, and build an Allied Client State (Nomadic version of Type IV Government) then keep all the buildings. Build Military Occupation, Indigenous Settlements, Allied Client State.
Note: You don't need to destroy an existing Nomadism unless you want to convert the town to Pastoralism.

Why would you want to destroy anything, apart from the government building? I mean, I might be missing something here, because I don't play the Steppe peoples but why would you destroy anything, apart from the buildings that give you no benefit?
I mean, I often destroy things for roleplay purposes but you'd need to decide that for yourself, I guess.
If there are buildings of your own culture, keep them.
If there are buildings of your culture, but say 'Western Greek' after their name, that means they are of your culture but were built by a tribe that used to be hostile - they are OK to keep, they can be upgraded later and the 'Western Greek' bit will go away when you do.
So don't destroy them unless you are absolutely desperate for instant income - you'll get cash in hand, but you'll have to pay more to rebuild them later plus your town will likely give you less income and be less happy in the meantime.
