As for which mods you should play, one can only go on personal taste when recommending. ;)
My three favourites are RTR7, Ogniem I Mieczem (Grantoz Version 2), and Somnium Apostatae Juliani (Invasion Barbarorum); of course, there are the old standbys: Europa Barbarorum and Roma Surrectum II; I'd recommend all of the above. Roma Vicit may be one to watch, as well, to see if they get realtime sea battles to work. ;)
EDIT: Hopefully, not all will have been affected by the recent loss of Megaupload.
