Okay, why don't you give us a link to the model you're building, and I could get a little more specific. If you're building the model I think you are, here is what I would suggest:

    Processor (CPU)
    Intel® Core™i7 Quad Core Mobile Processor i7-3720QM (2.60GHz) 6MB

    Memory (RAM)
    8GB KINGSTON HYPER-X GENESIS 1600MHz SODIMM DDR3 (2 x 4GB)

    Graphics Card
    NVIDIA® GeForce® GT 640M - 1GB DDR3 Video RAM - DirectX® 11

    Memory - Hard Disk
    750GB SEAGATE MOMENTUS XT HYBRID, SATA 6 Gb/s, 32MB CACHE (7200 rpm)

Throw in Windows 7 Pro and you're still clocking in at £994 with VAT and delivery.

Personally, I would suggest you bump the extra hundred quid and go with a better GPU, but that's just, like, my opinion, man. Using this model:

    Processor (CPU)
    Intel® Core™i7 Quad Core Mobile Processor i7-3610QM (2.30GHz) 6MB

    Memory (RAM)
    16GB KINGSTON HYPER-X GENESIS 1600MHz SODIMM DDR3 (4 x 4GB)

    Graphics Card
    NVIDIA® GeForce® GTX 670M - 1.5GB DDR5 Video RAM - DirectX® 11

    Memory - Hard Disk
    750GB SEAGATE MOMENTUS XT HYBRID, SATA 6 Gb/s, 32MB CACHE (7200 rpm)

I would have thought 16gb of RAM excessive?

Plus even with the 500gb HDD (all i really need as im coping with 120gb ish now) thats nigh on £1200 and thats pushing the boundary a bit too much

Well, when I spec it out with 8 gigs of RAM and a 500 gig hybrid drive, it clocks in at £1,047 with VAT and delivery. That's a much better video card for not a whole lot more money. Details:

    Processor (CPU)
    Intel® Core™i7 Quad Core Mobile Processor i7-3610QM (2.30GHz) 6MB

    Memory (RAM)
    8GB KINGSTON HYPER-X GENESIS 1600MHz SODIMM DDR3 (2 x 4GB)

    Graphics Card
    NVIDIA® GeForce® GTX 670M - 1.5GB DDR5 Video RAM - DirectX® 11

    Memory - Hard Disk
    500GB SEAGATE MOMENTUS XT HYBRID, SATA 3 Gb/s, (7200rpm)

Is there much difference between quad and dual core?
