Most of the available illustrations of Ottomans are from the 2nd half of the 16th century or latter. Here is an early 16th century book miniature that also includes a rare look at late Mamluks:

On the left are Ottoman sipahis on armoured horses and Janissaries.
On the right are Mamluk cavalry on armoured horses and infantry, both in takhfifat and kallawtat turbans. The artillerymen wear furry red zam? hats.
