In every Viking Invasion screenshot I see, it seems as if all eight factions are fighting it out on the same map. Is this the case in every battle, or are these all just coincidental screenshots of battles where a province was contested by all eight factions?

If you are referring to battle screen shots, it is probably a 4v4 multi-player battle.

It has to be MP: I do not think that there can be a situation where you have 8 (or so) fractions bordering a single province...
I agree with everyone that has posted so far in that the screenshots are probably taken from MP games, but I don't think that such a scenario is impossible in campaign mode. For example, seven factions could attack an island province at the same time, in which case they, together with the ruling faction of the province, would be separated into teams of allies, enemies, and neutral camps and pitted against each other on one map.

The screenshots are most likely from eight-way custom battles set up by our marketing team and repeatedly played to find the most dramatic-looking shots.
Can't blame us for wanting to show off the epic-ness of it all :)
