I've had civil wars, but never over the throne, nor have any of my friends that play - it could be a rare occurance - I'm not quite sure

"I request permanent reassignment to the Gallic frontier. Nay, I demand reassignment. Perhaps it is improper to say so, but I refuse to fight against the Greeks or Macedonians any more. Give my command to another, for I cannot, I will not, lead an army into battle against a civilized nation so long as the Gauls survive. I am not the young man I once was, but I swear before Jupiter Optimus Maximus that I shall see a world without Gauls before I take my final breath."

I've had a few, most recently in my Irish campaign. I had alot of young heirs as I approached death, think the oldest was 20. Well, one of them gets married and stays as the next in line to the throne. My king dies not so long afterwards and 4 of my 5 Princes left rebel. Only I think the second oldest stayed loyal, and he was just a 1 star general.

But, it wasn't that bad, I had them parked on a couple cheap stacks, my quality troops had been stacked with my King and heir. So I just took two generals and reclaimed the provinces, got them each a skilled attacker virtue in the slaughter. When you get low-influence Kings + alot of heirs you'll get near civil wars alot. I had figured they would stay loyal, but I guess they wanted their time in history.

I had one in my Turkish campaign when the Ottoman dynasty started. Had all my provinces back due to jihads quickly.

My impression from playing just one campaign as the Vikings is that civil wars are easier to come by - at least in the Viking era. In my campaign, I've attacked the Mercians and Northumbrians and the first year after my initial attacks, rebels appeared in one or two of the enemy's provinces. I also attacked the Picts but I don't recall if I saw any civil war. Maybe I'm just seeing randomness at work though.

Yes, I have seen a lot more civil wars, but not over the throne

It has happend a few times. One prince was stupid enough to revolt with only 200 men on his side...
Gandhi was once asked what he thought about western civilization. His response was: "I think it would be a good idea."
