    Thumbs up

Initially I did not bother with milita sergs... until I played for awhile and when figuring out how I would take out various enemy units I would be stumped at how to beat them (like playing the Islamic factions as it is in general more of a challenge and the crusades means the enemy factions will actually attack).

So town halls to max if possible, just to get well armoured and armour piercing units.

    Unique Units. Billmen, Longbows, Janissaries.

I very much have a building style in campaign mode. I like to build a hugely developed nation. My favorite has to be the fortified structures, with all their ammenities.

Yeah Militia Sergeants are very effective units, can be deadly with a few upgrades and they are quite cost effective. I normally have two or three in an army.

It depends on the phase of the game, of course.

For the opening, I build farmland, and that's my favorite building.

Once I start having naval units for trade, trade buildings (and ports of course) become my favorites, and take precedence over farms in coastal areas.

Once I start spreading out on land and have to consider garrisoning places to prevent revolts, churches/mosques become my favorite, taking precedence over even income because of their value in preventing revolts; while they are not the only ones that do that, they come first, and the plan to occupy an area always starts with a church.

Given enough money and mobility, which the buildings that are my favorites tend to enhance, I can use massive peasant armies (if that's all I can make) to slow an enemy down while I build a more effective force. Being able to produce the most elite units will not help if you can't afford them or move them quickly to the front.
